We caught up with Ian Burrell, a Rum Ambassador, who travels the world educating the masses about his passion; the history, different varieties and flavours of rum (they never told me about this job at the school careers fair).  I wanted the low-down on the best rum for my Christmas cake and fruit cakes in general.
