I should cocoa

If you’re baking a chocolate cake or making a chocolate dessert always use unsweetened cocoa powder (and not drinking chocolate). Opt for a brand that contains 100% cocoa solids. Dust over cakes and puddings for a rich taste and a soft texture; that’s equally lush in hot chocolate drinks. In the Delights Kitchen, I choose to use fairtrade and organic cocoa powder, whenever possible.

    if you haven’t tried it, Cynthia, I find that Marks & Spencer’s cocoa powder is absolutely beautiful stuff. It’s organic and fair-trade, and is SO dark – really excellent. Liz x
