Flavour file: Vanilla


Some people question whether there is actually a difference between Vanilla Extract and Vanilla Essence:

Well to start with, here’s the dictionary definition of the two.

Extract: Preparation containing the concentrated essence of a substance.
Essence: Concentrated liquid used to flavour food.

Vanilla Essence is the cheaper of the two, but it can be quite watery. You may get the scent of alcohol more than the actual vanilla.

Vanilla Extract is thicker and sometimes contains vanilla seed. Vanilla Extract taste more natural and is definitely more luxurious; it’s the superior of the two. Vanilla Extract will contain alcohol, but a lot less than the essence.

Vanilla Extract has a sweet delicious aroma; which means that your cakes and desserts will have a better taste….If you haven’t guessed already, I always use Vanilla Extract in Delights by Cynthia cakes.
