This one-off cake is probably the world’s most healthiest cake. Packed with pomegranates, bananas, blueberries, apples, carrots and baobab, an African superfruit. Baobab provides you with more iron than a juicy steak, more calcium than milk , six times more vitamin C than oranges and is filled with more fibre than wholemeal bread. Which means that each serving of this cake provides 59.9% RDA of Vitamin C, 47.8% RDA of potassium and 32.2% RDA of Vitamin A. It’s also low in saturated fat, low in salt and contains only naturally occurring sugars.
The cake was made to celebrate the launch of Boabab Superfruit Week at the Eden Project.
